Zucchini Casserole
1 onion, chopped
Preparation Sauté onion and carrot until onion is translucent.
Set aside. In a large bowl add the rest of the ingredients, except
the cheese. Mix well. Add onion and carrot. Mix well. Pour into a
9x13 pan. Bake at 350 degrees F for 35 minutes or until zucchini is
tender when poked with a fork. Sprinkle cheese over the top and bake
until cheese is melted. Remove from oven. Let stand 10 minutes
before serving. Also great cold!
