Zucchini Casserole
2007 Oregon's Best Winner

Flav-R-PakIngredients

  • 1 onion, chopped

  • 1 carrot, grated

  • 2 cups zucchini, cubed

  • 1 can cream of mushroom

  • 1 can whole corn

  • 1 16 oz container sour cream

  • 1 package Stove Top stuffing

  • Salt and pepper to taste

  • 1 cup grated cheese

Preparation

  1. Sauté onion and carrot until onion is translucent. Set aside. In a large bowl add the rest of the ingredients, except the cheese. Mix well. Add onion and carrot. Mix well. Pour into a 9x13 pan. Bake at 350 degrees F for 35 minutes or until zucchini is tender when poked with a fork. Sprinkle cheese over the top and bake until cheese is melted. Remove from oven. Let stand 10 minutes before serving. Also great cold!
