Preparation Cut zucchinis in half lengthwise and remove the
seeds to make a boat. Cook in salted water for 5 minutes, until barley
tender. Remove zucchinis from pot and place in a baking dish. Preheat oven to 400 degrees F. Combine drained carrots, corn, bread crumbs, cheddar
cheese, parsley and pepper. Fill this mixture into zucchinis and bake
for 20 minutes or until nicely browned.
