Mexican Strata
2007 Oregon's Best Winner

Ingredients

  • 5 slices white or whole wheat bread

  • 3 eggs

  • 1 cup 1% or 2% milk

  • 1 cup sour cream

  • 1 cup shredded Tillamook pepper jack cheese

  • 1 cup shredded Tillamook sharp cheese

  • 1 teaspoon dry mustard

  • ½ pound (8 oz) pork sausage, browned and drained

Preparation

  1. Spray an 8 in round baking dish with nonstick cooking spray. Spread bread cubes evenly in dish.

  2. In a mixing bowl, beat together eggs, milk and sour cream. Stir in both cheeses. Add crumbled pork sausage. Pour over bread cubes in baking dish. Cover and chill overnight.

  3. Before serving, uncover baking dish. Bake in 350 degree F oven for 30 minutes or until center is set and top is golden. Let stand 10 minutes before cutting.

  4. Serve with salsa and sour cream as side dishes. Serves four.
