Bob's Red Mill Honey Whole Wheat Bread
2007 Oregon's Best Winner

Yield: 2 loaves

Ingredients

  • 2 cups skim milk

  • ½ cup honey

  • 3 tablespoons butter or margarine

  • 6-61/2 cups Bob’s Red Mill Whole Wheat Flour

  • 2 packages active, dry yeast

  • 1 egg

  • ½ - ¾ tablespoon salt

Preparation

  1. Heat honey milk and butter to 120 degrees F.

  2. Assemble dough maker or mixer.

  3. In a large bowl, combine 3 cups flour, egg, yeast, salt and warmed milk mixture.

  4. Mix with dough maker for 3 minutes.

  5. Gradually add enough remaining flour to form stiff dough.

  6. Knead with dough maker until smooth and satiny, about 4 minutes.

  7. Placed dough in greased bowl, turning once to grease top.

  8. Cover and let rise in a warm place until doubled, about 1 hour.

  9. Punch down and divide into two equal parts. Let rest 10 minutes.

  10. Shape into loaves and place in two greased pans, 9”x5”x3”.

  11. Cover and let rise in a warm place until doubled, about 1-11/2 hours.

  12. Bake in preheated 375 degree F oven for 10 minutes.

  13. Reduce heat to 350 degrees F and continue to bake 30-35 minutes.

  14. Remove from pans and cool on a wire rack.
