Bob's Red Mill Ben's Daily Bread
2007 Oregon's Best Winner

Ingredients

  • 3 heaping tablespoons yeast

  • 5 cups warm water

  • 1 cup Bob’s gluten flour

  • ½ cup ground pecans

  • 1 cup Bob’s flax seed meal

  • 2 (a little less) tablespoons Bob’s salt

  • ¾ cup sugar

  • 1 cup Bob’s oat groats

  • ? cups Bob’s hard wheat berries

Preparation

  1. In the mixing bowl, proof the yeast with the sugar, flax, gluten, nuts and warm water. Mix and let stand. Grind the wheat and oats. Add the flour till it feels right, about 15 cups?

  2. Mix for 8 minutes. Let rise 20 minutes. Turn the machine on to knock down the dough, then dump on the counter and divide into 5 loaves. Knead a few times into shape and place in greased loaf pans.

  3. Put in the oven on lowest setting for 15 minutes, and then bake at 350 degrees F for 20 minutes.
