Homemade Wheat-Oat Bread

Ingredients
3 cups Bob’s Red Mill Whole Wheat Flour
1 cups Bob’s Red Mill Oat Flour
1 cup oat bran
1 ¼ teaspoon salt
1 tablespoon raw sugar
2 tablespoons active dry yeast
½ cup dry milk
¾ teaspoon cinnamon
2 cups warm water
½ cup maple syrup
1/3 cup honey
1 tablespoon molasses
1 tablespoon canola oil
1 ¼ cup Bob’s Red Mill Unbleached White
Flour
Preparation
Using a standup mixer place all dry ingredients, except
unbleached white flour, in mixer bowl and stir well. Add liquid
ingredients to flour mixture and mix thoroughly.
Let dough rest 20 minutes.
Add white flour and mix well with dough hooks.
Cover and let rise 1 hour.
Punch down and shape ¾ of the dough into a loaf.
Put in a loaf pan coated with canola cooking spray. Rub
water on top of loaf, cover with a towel and let rise 1 hour.
Bake at 350 degrees F for 25 minutes.
