Bob's Red Mill Bob’s 100 % Whole Wheat Bread

Ingredients

  • 2 ½ cups Bob’s Red Mill Whole Wheat Flour

  • 1 small Potato (enough to make ½ cup when mashed)

  • 1 cup warm potato water

  • 2 tablespoons butter

  • ¼ cup brown sugar

  • 2 teaspoons yeast

  • 1 teaspoon salt 

Preparation

  1. Preheat oven to 375 degrees F.

  2. Boil potato in salted water until tender. Drain water from potato and set water aside until luke warm.

  3. Add yeast and sugar to potato water, let sit until foamy (about 5 minutes).

  4. Mash potatoes very fine, add to water mixture.

  5. Knead in flour one cup at a time until dough is elastic and springs back when touched with a finger tip (about 10 minutes).

  6. Let rise in a warm place for 1 hour or until doubled in size. Punch down.

  7. Let rise again, punch down then form into a loaf and put into a pan.

  8. Let rise once more until nearly double. Bake for 30-40 minutes.

  9. Cool for 15 minutes, slice and serve. Enjoy!
