Flav-R-PakIcy-Hot Many Veggy Salad with Shrimp
2008 Down Home Favorite's Contest - Oregon's Best Winner

IngredientsSantiam

Vinaigrette:

  • 4 cloves minced garlic

  • 2 tbsp. grated fresh ginger root

  • 2 tbsp. brown sugar

  • 2 tbsp. Cajun seasoning mix

  • 2 tbsp. soy sauce

  • 1/3 cup lime juice

  • ¼ cup extra virgin olive oil

  • 1 tbsp. sesame oil

  • Salt and pepper to taste

Salad:

  • 6 cups FLAV-R-PAC Quick’n Easy Stir Fry Vegetables

  • 1 can (16 ounces) Santiam Three Bean Salad, well drained

  • 2 large tomatoes, peeled and diced

  • 1 bunch green onions, chopped

  • 3 cups cooked brown and wild rice, cooled

  • 1 pound cooked shrimp

  • Lettuce leaves

Preparation

Mix all dressing ingredients together. Mix salad ingredients together except for lettuce. Pour dressing over all and arrange on lettuce leaves. Serves 4-6.
