1 can (16 ounces) Santiam Three Bean Salad, well
drained
2 large tomatoes, peeled and diced
1 bunch green onions, chopped
3 cups cooked brown and wild rice, cooled
1 pound cooked shrimp
Lettuce leaves
Preparation
Mix all dressing ingredients together. Mix salad
ingredients together except for lettuce. Pour dressing over all and
arrange on lettuce leaves. Serves 4-6.
